Descrizione sintetica in italiano | Research objectives The research projects aims to investigate the relations between the fruit physiological maturity at harvest with different storage conditions on the development of volatile organic compounds (VOCs) associated with aroma and eating-quality of peaches and nectarines. Research methodology The research will employ orchard work (fruit sampling) and laboratory work (VOCs identification and quantification, general fruit quality assessment).Trials will be conducted on different Italian peach cultivars that are mainly grown for the export market. Fruit aroma volatiles will be assessed during cold storage and the shelf life period in order to characterize the fruit volatiles emission in the different treatments. This research is likely to recommend further investigation on fruit aroma volatiles and ripening behaviour to increase national and export peach market. |
Descrizione sintetica in inglese | Consumer dissatisfaction due to poor quality of peaches and nectarines limits sales on domestic and export markets of relevant peach-producing countries. Despite the new varieties introduced achieving a high quality standard, the incorrect determination of the optimal time to harvest and the inappropriate management of the fruit during handling, storage and distribution results in poor quality at consumption. To reduce fruit perishability and withstand several weeks of cold storage, peaches and nectarine are commonly harvested prior the optimal maturity without considering the possible modification in aroma components and therefore consumers acceptance. The effect of fruit maturity at harvest on ripening behaviour and eating quality during handling, storage and distribution is not clear. An understanding of the fundamental mechanisms controlling changes in flavour is limited and most biochemical pathways determining this quality trait are not well investigated in stone fruit. |
