| Descrizione sintetica in italiano | Characterization and selection of GRAS strains belonging to the DISTAL Microbial Culture collection based on their metabolic activities and features of technological and functional interest - Cold plasma treatments for the decontamination of fresh produce - Lab scale fermentation in combination with non-thermal treatments to obtain innovative fermented foods: evaluation of the performance of the microbial starter in relation to intrinsic and extrinsic variables on safety, quality, nutritional and functional properties of the final products - Challenge tests and assessment of the microbiological risks associated with the innovative products - Shelf-life study of the innovative products to assess possible benefits in terms of increased stability, sensory, qualitative and functional properties |
| Descrizione sintetica in inglese | The aim of the research project is to identify and develop biotechnological approaches for the production of traditional or new products in order to increase their quality, safety and functional properties. For this purpose, different categories of products will be considered such as minimally processed and fresh ready-to-eat fruit and vegetables, fruit juices, fermented products from vegetable matrices. Mild technologies as cold atmospheric plasma or PEF treatments will be considered as well as natural functional ingredients from plants or agro-food residues Bioprotective/probiotic/starter cultures for tailored fermentation will be used to produce innovative functional foods, or to preserve shelf life and safety of traditional ones, tr to enrich the food with relevant functional and nutritional compounds or reduce the content of antinutritional ones. |
