| Descrizione sintetica in italiano | The agri-food sector generates vast quantities of by-products rich in bioactive compounds with potential health-promoting and economic value. However, much of this biomass remains underutilized due to insufficient characterization and lack of scalable extraction and valorization strategies. The proposed project aims to unlock the hidden potential of bioactivemolecules in both food matrices and their by-products using untargeted omics approaches and integrated valorization frameworks. The primary objective of this project is to harness the power of untargeted omics technologies to uncover and valorize high-value bioactive compounds from both food matrices and their associated by-products. |
