Descrizione sintetica in inglese	As part of the project, the omics techniques (proteomics and metabolomics) will be used to characterize some traditional South Tyrolean fermented foods in order to identify bioactive molecules in gut-brain communication. The presence of these molecules during the digestive process will also be assessed. Indeed, these molecules can be generated during fermentation or released/produced during digestion. The structural, functional and behavioral dynamics of bioactive molecules within the intestinal ecosystem will also be explored. The overall aim of the project, which is part of a larger European Social Fund Plus project (ESF2_f3_0006), is to demonstrate a twoway communication between the gut and the brain through the consumption of fermented foods, with a focus on improving mental health...
